\nHere's an omelette loaded with healthy veggies and flavour, and is a complete meal in itself. This will surely keep you feeling full for a long time! <\/p>
\nTake one large capsicum, tomato and onion. Chop them into cubes and set aside. Finely chop four cloves of garlic and set aside. Take about a cup of fresh spinach and wash thoroughly. Crack three eggs into a large bowl and season with salt, pepper and chili powder to taste. <\/p>
Heat up 4-5 tablespoons of oil in a flat-based saucepan over a medium flame. Add in the onions and capsicum and cook gently until onions are soft and translucent. Add in the garlic and tomatoes and cook until they lose their raw flavour. Season with salt and pepper(garam masala if desired). Add in the spinach and cook for 1-2 minutes. Add in the beaten eggs and mix until the eggs thoroughly coat the bottom of the pan. Cover the pan with a lid and cook on low flame for 5-6 minutes. Remove the lid and flip the omelette(this is the tricky part) and cook for another 2-3 minutes.<\/p>

This one is for when you have friends over or you're just really really hungry. Don't get intimidated, it's pretty simple to make. <\/p>
Heat 2 tablespoons of oil in a saucepan. Add two chopped onions and saute until they become translucent. Add in 2 tablespoons of ginger-garlic paste and finely chopped green chillis. Saute until onions turn golden. Add 3 pureed or crushed tomatoes and cook until oil starts to leave the sides of the pan. Add one teaspoon each of turmeric, chilli powder and garam masala. Add salt to taste. Add 200 grams grated paneer and mix until completely incorporated with the onions. Remove from heat and garnish with chopped coriander.<\/p>
